Favorite recipes from Braeside Inn

 

Braeside Gluten Free Granola

 

1 bag (32 OZ) of Bob’s Red Mill gluten free old fashioned rolled oats

 

2 cups slivered almonds (chopped)

 

2 cups walnuts (chopped)

 

2 1/2 teaspoons cinnamon

 

1 teaspoon nutmeg

 

1 cup sunflower oil

 

1 cup brown rice syrup

 

4 cups total of mixed dried unsweetened, unsulfered fruit such as cranberries, raisins, cherries (chopped), apricots (chopped), plums (chopped), and/or pitted dates (chopped)

 

In a large roasting pan, combine the oats, cinnamon, and nutmeg. Mix in the brown rice syrup and sunflower oil. Make sure all these ingredients are well incorporated.  Bake at 275F for 65-75 minutes, stirring the cereal every 15 minutes. When the mixture turns golden brown, remove from the oven, stir in the fruit and let cool to room temperature. Refrigerate in an airtight container. Freeze the rest.

 

Tip: If dates are used, place them in the freezer. Once the mixture is in the oven baking, then cut up the dates. They are less sticky when they are cold. A wet knife also helps or a pair of cooking scissors. 

 

 

Braeside Versatile Gluten Free, Dairy Free, Sugar Free, Cookies

 

Mix together

 

1 1/4 cups of Bob's Red Mill all purpose gluten free baking flour

 

1/4 teaspoon salt

 

1 teaspoon baking powder

 

1/2 teaspoon baking soda

 

3 tablespoons Xylatol

 

Add

 

1/3 cup brown rice syrup

 

1/3 cup sunflower oil

 

1 1/2 teaspoons vanilla

 

1/3 cup chopped nuts (walnut, pecans, slivered almonts)

 

1/3 cup unsweetened carob chips or chopped unsweetened dried fruit (cherries, cranberries plums)

 

Preheat oven to 350 degrees

 

Drop by teaspoonfuls on lined baking sheet. Bake 11 minutes.

 

 

 

Braeside Eggs

 

6 eggs beaten lightly

 

1 lb. cheddar cheese grated

 

1 lb. cottage cheese

 

1 cup bisquick

 

4 tblsp oleo melted

 

 

Mix all ingredients together. Bake at 350 for 40 minutes in 9x13 greased pan. Cut into squares-let set a few minutes before serving.

 

You can add green peppers, green onions, mushrooms, shrimp, ham, bacon (cooked) or sausage for variety.
